Skillet Fudgy Brownie Pudding

Baileys, both in the batter and in the whipped cream, so you can think about St. Patrick’s day all year round. It’s just too good to have it only once a year. The first time I had a chocolate brownie pudding, I was jumping around the kitchen waiting for the timer to go off. And you’ll love the adult-only accompaniment—you may end up putting a touch of Baileys in all your favorite desserts. Feel free to plop some ice cream on top too and grab those spoons!

Ingredients

  • 1 c.(2 sticks) unsalted butter, plus more for pan
  • 3/4 c.(150 g.) granulated sugar
  • 1/2 c.(85 g.) chopped 60% to 70% bittersweet chocolate
  • 2large eggs
  • 3 tbsp.Baileys Irish cream, divided
  • 1/3 c.(30 g.) unsweetened cocoa powder
  • 1/4 c.(30 g.) all-purpose flour
  • 1/4 tsp.kosher salt
  • 3/4 c.heavy cream

 

Directions

    1. Step 1

      Preheat oven to 325° and butter an 8″ round cake pan or medium heatproof skillet. Place inside a larger pan, such as a 13 1/2″-by-10″ roasting pan.

    2. Step 2In a medium saucepan over medium-low heat, cook butter and granulated sugar, stirring frequently, until butter melts and sugar dissolves, 7 to 9 minutes. Remove from heat and stir in chocolate. Let cool 5 minutes. Whisk in eggs and 2 tablespoons Baileys.
    3. Step 3In a medium bowl, whisk cocoa powder, flour, and salt to combine. Fold dry ingredients into butter mixture, then stir until mixture resembles wet brownie batter.
    4. Step 4Pour batter into prepared pan. Pour hot water into larger pan until it reaches halfway up the sides of smaller pan.
    5. Step 5Bake brownie pudding until a flaky crust forms, resembling the top of a traditional brownie, and the center is slightly underdone and almost jiggly, 30 to 40 minutes. Let cool slightly.
    6. Step 6Meanwhile, in a medium bowl, using an electric mixer on medium-high speed, beat cream and remaining 1 tablespoon Baileys until medium peaks form. Top brownie pudding with whipped cream.
