How to Make Vegan Cream of Mushroom Soup
- Prep – Cook the diced mushrooms, onions, and garlic in a large pot until the onion is translucent. Sprinkle with flour. Mix well.
- Add last ingredients – Add broth, coconut milk, salt, and pepper. Mix well. Simmer for 15 minutes.
- Serve and enjoy.

Ingredients
- 8 Ounces Mushrooms sliced
- ½ Red Onion large, diced
- 5 Cloves Garlic minced
- 2 Tablespoons Vegan Butter or olive oil
- ¼ Cup Flour
- 13 Ounces Coconut Milk full fat
- 1 ½ Cups Vegetable Broth
- Sea Salt to taste
- Freshly Ground Pepper to taste
Instructions

In a large pot, melt the vegan butter and then saute the mushrooms, onion, and garlic until the onion is translucent (about 5 minutes).

Sprinkle the flour over the ingredients in the pot, then stir until the flour has soaked up the juices.

Add in the vegetable broth and coconut milk. Stir, and simmer for about 15 minutes.

Remove from the heat and allow to cool a bit in order to further thicken. Serve.
