Vegetable Cream Cheese Tortilla Roll Ups

These vegetable cream cheese tortilla roll ups are the most fun little pinwheel sandwich bites ever! They’re a great school lunch option but also make the most amazing appetizer or back to school snack!

These Vegetable and Cream Cheese Tortilla Roll Ups are my latest obsession!

They’re crazy hard to photograph but ohmygosh these little confetti-colored roll ups are goooooood!

You can serve them up in place of a sandwich at lunch or pile them on a plate as an appetizer for your next party or potluck.

These veggie and cream cheese tortilla pinwheels are SO easy to make!

Spread a burrito-sized tortilla with your cream cheese spread and top with a sprinkle of grated carrots, minced red bell pepper, chopped broccoli, and grated cheddar cheese.

Start at the edge of the tortilla and roll it, tightly, until you reach the opposite side.

The cream cheese will help it stick! Fasten with a toothpick or two and chill in the freezer for 20 minutes to set. Cut into pinwheels and serve with all your favorite lunch box fixin’s!

Vegetable Cream Cheese Tortilla Roll Ups – and easy make ahead lunch option!

To make these pretty pinwheels ahead of time, all you’ll need to do is skip the quick trip to the freezer to set and instead chill these in the fridge overnight wrapped in plastic wrap, parchment, or stored in your favorite airtight storage container.

So… what are you waiting for? Get your roll up on!

If you get a chance to try these veggie cream cheese roll ups, let me know!
